Butter poached fish is easy to make and the fish comes out tender, and infused with the butter flavour. I used Icelandic cod in this recipe that I picked up at a local fish market, but feel free to use Pacific/Atlantic cod, halibut or another meaty fish.
The topping does not need to be cooked and surprisingly does not overpower the fish with the horseradish, and gives the dish a real kick. The dish is perfect on a bed of rice.
Another awesome thing is that this dish can be on your table in less than 30 minutes. Happy eating!
[Recipe] Butter poached cod with a carrot horseradish topping
Ingredients
- 1.5 pounds of cod cut into even pieces (about 2 by 3 inches)
- 1 cup of salted butter
- 1/4 cup of dill-rough chop
- 1/3 cup of lemon juice
Topping
- 1 cup of grated carrot
- 1 tsp of prepared horseradish
- 1 tsp of dill-chopped finely
Instructions

In a pan or the microwave, melt the butter.

Preheat the oven to 400 degrees F.

Place the fish in an oven safe dish. Pour the butter, lemon juice, and the dill on the fish.

In a bowl, add the grated carrot, horseradish and chopped dill and mix well.

Put the fish in the oven and cook for 10 minutes. The fish should be just cooked.

Remove the fish from the oven. Take the fish out of the butter and plate.

Top each fish with the carrot topping. Serve immediately.
Recipe Notes
Feel free to add finishing salt like maldon salt to each fish before serving.
