I was invited by the restaurant to the Grand Opening of Ebisu, which is part of the reputable Kamei Group from Vancouver. The food focuses on transforming traditional Japanese cuisine to modern delicacies. The restaurant is located on Queen St. and Duncan St., taking over the old Sushi Queen restaurant.
What made the event worth attending was seeing the traditional sake ceremony and seeing the Chef fillet a 135 pound blue fin tuna that was shipped from Japan. Better yet, I got to taste two pieces of the tuna!
See the Ebisu Chef cut the tuna from start to finish in a 1 minute time lapsed video. Talk about wicked knife skills!

Although the food on display looked incredible, it was there for attendees to take pictures of the dishes rather than to sample them. I did not eat much at the event to provide feedback which gives me a reason to return.
