Life is about experiences, and once again I have another amazing experience to add to my books. I jumped on the opportunity to cook on stage at the Gourmet Food and Wine Expo (GFWE); one of the busiest trade shows in Toronto. I am forever thankful to Jenn Nicken, founder of The Chef & The Dish for giving me the chance to learn from the amazing Chef Yoshimi who joined us live from Japan. I am also thankful for all the love and support from my family, friends and Mary Happy Belly fans who attended!
I learned two incredible authentic Japanese appetizers from Chef Yoshimi including tofu in a mushroom sauce that uses dashi stock made from scratch. I have always wanted to learn how to make dashi stock which is the base of many Japanese soups and dishes.
The Chef & The Dish is a global, online kitchen-to-kitchen cooking experience where food lovers can learn from top chefs from around the world in the comfort of their home with personal cooking classes live via Skype.

This is my fourth year attending (read about my 2013, 2015 experience) and had a great time as usual. I do find the expo to be heavy on the alcoholic beverages over food vendors. One of my favourite things about the expo is scoring all the free samples!
My favourite dish based on taste and value at the expo goes to Casa Manila’s chicken adobo. What a beautiful and filling dish!
Aside from cooking on stage and grabbing a few bites, I had a chance to attend my first tutored wine tasting that was hosted by The Wine Sisters, who are professional wine sommeliers.
My friend and I had a chance to try out ten Gold medal-winning wines from the 2016-17 InterVin International Wine Awards for the Intervin Gold Tutored Tasting Seminar. The seminar was informative as The Wine Sisters taught how to evaluate our wines from the colour, smell and look. It was the perfect way to start our evening at the expo this year!
