Smoked salmon is a staple at family gatherings often seen on charcuterie boards and appetizers. The smoked salmon mixed in with fennel that is marinated in a citrus dressing, makes a phenomenal salad. If you do not have lemon, fresh orange or tangerine juice is also a wonderful substitute. The balance of the fresh salad with the salty salmon, makes a perfect balance.
This salad needs little preparation time, looks beautiful on the table and is absolutely delicious.

Smoked Salmon Fennel Salad
Ingredients
- 2 cups of fennel-sliced on the bias
- 1 package (454 g) of smoked salmon
Dressing
- 1/4 cup of extra virgin olive oil
- 1 tbsp of lemon juice
- 1/2 teaspoon of honey
- Pinch of salt
- A handful of cilantro-rough chop
Instructions

Slice the fennel and set aside.

In a bowl, add all the ingredients in the dressing and mix well.

Add the dressing to the fennel and let it sit there for at least 15 minutes. The fennel in the dressing can be prepared 1-2 hours in advance.

Right before serving. spread the smoked salmon on a large dish, top with the dressed fennel and garnish.
