Watermelon tomato gazpacho

The recipe is for 1 large cup, so please portion the amount appropriately for your needs.

Ingredients

  • 2 cups of watermelon-rough cube
  • 1 large ripe tomato- Rough chop leave the seeds in
  • 1/4 cup of cucumber- Rough dice
  • 1/2 a small shallot
  • Pinch of salt and pepper
  • 1 splash of extra virgin olive oil
  • 1 splash of red wine vinegar
  • 1 tsp of lime juice
  • 1/4 cup cucumber-diced
  • 1/4 cup red peppers-diced
  • 2 sprigs cilantro

Instructions

  1. Add all ingredients into a blender.

  2. Taste and adjust to your liking.
  3. Garnish with diced red peppers, cucumbers and cilanto
