Air Fry Panko Crusted Cod

You will love my air fry panko crusted cod with a sweet soy marinade, as it has a crispy layer of panko bread crumbs and perfectly cooked fish. Tasty and healthy eats is where it’s at! I have also shared a spicy mayo dipping sauce that goes well with the fish. 

What is air fry?

There are kitchen appliances that are strictly an air fryer or have an “airfry” function built in. Air frying cooks the food by circulating hot air around the food using the convection mechanism. I used the Breville Smart Oven Air, which is an incredible countertop oven with many useful functions including roast, toast, dehydrate and airfry (full review of the oven here). The Breville’s Smart Oven Air’s “airfry” does an excellent job with even circulation, resulting in evenly cooked food and browning of the panko crust. 

Why you will love this recipe?!

The seasoned panko crust provides a thin layer of crispy flaky crumbs to add texture to the dish. Instead of pan frying or deep frying the fish, I was able to cook the fish with less oil using the air fry function. I chose cod as I love the meatiness and texture, and it absorbs the soy marinade quickly.

Do note that the panko crust will not be crispy at the base layer of the fish, as it is sitting on the rack.

This dish is perfect for a quick weeknight meal, as the fish cooks in about 20 minutes.

Ingredients

  • 4 Cod Fillets 1 pound 3 oz, cut 3 inches in length
  • 1 cup of panko bread crumbs
  • 1 tsp of salt
  • ½ tsp of freshly cracked black pepper

Marinade

  • cup of soy sauce
  • 1 tsp of sugar
  • 2 tsp of lemon juice
  • 2 tsp of sesame oil

Spicy mayo:

  • ¼ cup of Japanese mayonnaise
  • 1 tsp of lemon juice
  • 1 clove, minced
  • 1 tsp of sambal oelek
  • A pinch of black pepper

Instructions

  1. In a bowl, mix all the ingredients in the marinade together.
  2. In a deep dish, add the fish and pour the marinade on the fish. Turn the fish a few times to ensure the marinade soaks on all sides. Keep the fish in the fridge for 20 minutes to an hour.

  3. In a separate dish, add the panko bread crumbs, salt and pepper and mix well.

  4. On the Breville Smart Oven Air, choose “Airfry” and preheat the oven to 400 degrees F.

  5. Roll each fillet into the panko and use your hands to pack as much crumbs on all sides of the fish.

  6. Place the crusted fish on a roasting pan with a rack. Place the pan in the middle rack of the oven and air fry for 20 mins.

  7. In a small bowl, add all the ingredients in the dipping sauce and mix well.
  8. After 20 mins, remove the pan from the oven. Plate the fish and serve with the dipping sauce.

Recipe Notes

You can also roast or bake the fish, although the cooking time may vary.
