Easy Lemon Dill Pasta with Smoked Oyster Recipe

This pasta dish has bright flavours with lemon and dill, as well as smoked oysters and parmesan cheese. It is incredibly scrumptious and it is SO easy to make. Dill and seafood goes hand in hand, and dill is a match with the salty oysters.

Aside from being easy to make, the ingredients are easy to find at your local grocery store. I bet that you already have many of the ingredients in your pantry. Start making it today…actually, right now! I also added a video of how to make this dish below.

It has flavours that scream summer but it works well all year around.  Get ready to feel like you created a dish from a fancy restaurant. The dish works well as an appetizer, a main, served hot or cold!

How easy is this lemon dill pasta recipe?

There is little cooking in this recipe…like very little! Aside from the pasta needing to be boiled and cooked, the garlic is sautéed for a few minutes followed by the smoked oysters for about a minute. That’s it! Smoked oysters come in a can and are already cooked, so I am able to use it as is. I even used the oil that it is soaked in. The rest of the dish is simply seasoning, tossing, and assembling. You can even serve this table side!

How did I come up with this recipe?

This recipe was created for a Cloverleaf contest they were running for homecooks to showcase their products. I didn’t win their giveaway but instead came up with an incredible recipe. That’s winning in my books!

I  found packages of the Cloverleaf Smoked Oysters in my cupboard and used it as my inspiration and base for the recipe. The other theme I was going for was easy to make, with pantry ingredients. The recipe crosses all those boxes!

I made this for my family over the summer and they were completely blown away and I had to share this recipe with all of you!

What are smoked oysters?!

They are cooked oysters that have a smoky flavour typically sold in a tin can like sardines. I can literally open a can and eat the oysters as is! The recipe works better with smoked oysters over fresh in terms of texture and concentration of flavours.

Did you know that smoked oysters have many health benefits? They are low in saturated fat, free of trans fat, and a good source of protein. They also are a good source of iron, selenium, and omega-3 polyunsaturated. Let’s go stock our pantries.

I used the Cloverleaf brand but you can use any brand of smoked oysters you can get your hands on.

Lemon Dill Pasta with Smoked Oysters

An easy pasta dish bright flavours from dill and lemon, as well as smoked oysters and grated parmesan cheese.

Ingredients

  • 1 package (400 g) capellini pasta
  • Water for boiling pasta
  • Salt and fresh cracked black pepper, to season
  • 2 ( 85g each) Clover Leaf Smoked Oysters in sunflower oil
  • 5 garlic cloves, minced
  • Juice of 2 lemons plus zests (⅓ cup)
  • 1 cup dill, chopped, reserve ½ cup
  • ½ cup parmesan cheese, grated Have more handy
  • cup extra virgin olive oil, plus extra for drizzling Have more handy
  • Avocado oil, or oil of choice

Instructions

  1. In a large pot, add water and desired amount of salt, and cook pasta according to box instructions. Remove the pasta when the texture is al dente (about 5 minutes)

  2. In a pan, add oil, and saute the garlic until soft. Add the smoked oysters and the sunflower oil from the can and cook for 1 minute.

  3. In a large bowl, add the cooked pasta, smoked oysters and garlic mixture. Gently toss. Add the lemon zests, lemon juice, half the chopped dill and extra virgin olive oil. Toss. Season with salt and pepper.

  4. Top with grated parmesan cheese and mix.

  5. Plate and add the remaining dill. Drizzle with extra virgin olive oil, a pinch of black pepper, and grated parmesan cheese.
